Origin
The Black Forest Gateau gets its name, not as you might expect from the wooded mountain range in the South West Germany, but from the specialty liqueur from that region known as Schwarzwälder Kirsch, which is distilled from tart cherries. This is the ingredient, with its distinctive cherry pit flavour and alcoholic content that gives the cake its flavour. Typically, Black Forest cake consists of several layers of chocolate cake, with whipped cream and cherries between each layer. Then the cake is decorated with additional whipped cream, maraschino cherries, and chocolate shavings. MONIN has recreated the exquisite taste of this gateau to enable you to create indulgent dessert drinks, Fabulous Cocktails or Dessert Lattes!

Black Forest Martini 

Ingredients

45ml Black Forest Syrup
25-30ml cherry brandy
10-15ml crème de cassis

Chocolate cream topping:
25ml chocolate flavoured Irish cream liqueur
100ml whipping cream

Garnish:
10g dark chocolate
1 glacé cherry

Method

1 To make the chocolate cream, whip the chocolate flavoured Irish cream liquor with 100ml of whipping cream until it is lightly aerated. It should still be a pouring consistency.

2 Fill a martini glass with ice to chill.

3 Fill your cocktail shaker three quarters full of ice.

4 Add the Black Forest Syrup, cherry brandy and crème de cassis.

5 Shake vigorously for around 15 seconds to ensure that it is well mixed and well chilled.

6 Empty your martini glass and strain your cocktail into the glass.

7 Top with the chocolate whipped cream, grate over dark chocolate and garnish with a glacé cherry.
